TUO ZAAFI; A MUST TRY!

Tuo Zaafi is one of the healthy dishes you can find in Ghana. Mostly eaten by people from the Northern part of Ghana, tuo zaafi is also very nutritious and easy to digest. Tuozaafi is also known as “saakbo” in the other languages.

Tuo Zaafi has gained popularity not only in Ghana but many African countries including Nigeria, Burkina Faso, Mali and Niger. These days, restaurants have included it in their menu list which shows how much this dish has been widely accepted by Ghanaians from various regions.

Tuo Zaafi is made with corn flour and millet flour and doesn’t need a special kind of skill or energy to be able to prepare.

 

PREPARATION OF TUO ZAAFI

Ingredients needed are Corn or Millet flour, water and Shea butter(optional).

Equipment’s needed may include a mixing bowl, wooden spatula, cooking utensil, calabash and your source of heat.

PROCEDURE

  • Put your cooking utensil on your fire or source of heat.
  • put a measurable amount of water into the pot.
  • Leave the water to boil. Mix flour with water into watery paste.
  • Pour the watery paste into the boiling water as you stir till its completely mixed up.
  • Depending on your source of heat, close it with a lid and leave it to boil for at least two minutes.
  • Now use your calabash in taking out some of the porridge into a clean bowl.
  • Now start to stir the porridge with your wooden spatula while adding flour and try as much as you can to avoid lumps.
  • You will get a thicker paste after the previous step then add the porridge collected into the bowl, step by step.
  • Make sure it is thoroughly mixed.
  • Leave it to boil for another 2-3 minutes, depending on your source of heat.
  • Now your Tuo Zaafi is ready to be dished out.
  • To make it easier to collect into a plate, pour a little amount of water into your calabash. This would prevent the Tuo Zaafi from sticking into your calabash.
  • Now garnish your Tuo with sheabutter to prevent it from sticking on your hands.
  • Now serve Tuo Zaafi with preferred soup.

Nutritional benefits

Tuo Zaafi is basically a carbohydrate food. So to have a balanced meal, serve it with Ayoyo soup,which contains some vitamin, minerals,fat and protein or with Palm nut soup, green leaves, groundnut , spinach or etc.
